Duck, Burdock and Shredded Leek Miso Soup
This miso soup offers a superior combination of domestic duck (aigamo), burdock and Japanese leek (naga-negi). It tastes fantastic.

Directions
- Cut the aigamo into proper sizes and shave the burdock into slightly larger pieces. Shred the naga-negi lengthwise very thinly into “shiraga-negi.”
- Boil the aigamo and burdock in the dashi stock.
- After the ingredients are cooked, lower the heat and dissolve the miso. Serve the miso soup in bowls with the shiraga-negi on top.
★ A Note
Avoid overcooking aigamo. It hardens if overcooked.
