Green Soybean Miso Soup with Soymilk
The flavor and taste of green soybeans (edamame) can be enjoyed best only in summer. Enjoy edamame fully with this miso soup.

Directions
- Boil the edamame for mashing in water with the salt and take the beans out. Mash the edamame beans in a mortar.
- Bring the dashi stock to a boil and dissolve the miso. Add the soymilk.
- Place the mashed edamame in bowls and pour in the soup of 2. Serve the miso soup in bowls with the edamame beans on top.
★ A Note
Both miso and soymilk are made from soybeans. They should match perfectly with edamame.
