White Bitter Gourd and SPAM Miso Soup
This is a miso soup of bitter gourd (goya) in season and SPAM, both popular foods in Okinawa.

Directions
- Remove the seeds and pulp from the shiro-goya and cut into semicircular slices. Cut the SPAM into about 5-mm slices and chop the green chili finely.
- Boil the shiro-goya and SPAM in the dashi stock. After the ingredients are cooked, lower the heat and dissolve the miso.
- Serve the miso soup in bowls with the green chili sprinkled.
★ A Note
Shiro-goya is less bitterer than popular ordinary green goya.
