Spinach, Bacon and Yuzu Miso Soup
Sweet miso is good for this excellent combination, with yuzu (a Japanese citrus fruit) giving a little kick to it.

Directions
- Boil the spinach and cut it into proper sizes. Cut the bacon into 2-cm pieces. Slice the yuzu peel thinly.
- Bring the dashi stock to a boil and add the bacon. After the bacon is cooked, dissolve the miso and add the spinach.
- Serve the miso soup in bowls with the sliced yuzu peel on top.
★ A Note
Remove the white inner layer from the yuzu peel and slice it thinly. It adds a refreshing flavor to the miso soup.
