Kanato Pufferfish and Japanese Leek Miso Soup
Kanato-fugu is a type of harmless pufferfish and is firm-textured and best to eat in winter. It goes well with Japanese leek (naga-negi) in this miso soup.

Directions
- Cut the kanato-fugu into proper sizes and slice the naga-negi diagonally.
- Bring the water to a boil and add the kanato-fugu. After the kanato-fugu is cooked, dissolve the miso and boil for a moment.
- Serve the miso soup in bowls with the naga-negi and shichimi-togarashi sprinkled.
