Western-style Summer Miso Soup
With coconut milk, this miso soup is full of summer flavor.

Directions
- Cut the chicken thigh into proper sizes and slice the onion and red bel pepper.
- Bring the dashi stock to a boil and add the chicken, onion and red bell pepper. After the ingredients are cooked, add the coconut milk, dissolve the miso and boil for a moment.
- Serve the miso soup in bowls with the basil leaves on top.
★ A Note
Instead of basil, you can use cilantro, if you like.
