Rape Blossom, Tofu and Potato Miso Soup
The sweetness of rape blossom (nanohana) and new potato gives a feeling of spring.

Directions
- Peel and quarter-slice the potato. Boil the nanohana and cut it into proper sizes. Cut the tofu into proper sizes.
- Bring the dashi stock to a boil and add the potato. After the potato is cooked, dissolve the miso and add the tofu.
- Serve the miso soup in bowls with the nanohana on top.
★ A Note
Nanohana becomes less bitter after it is boiled.
