Mixed Grains and Daikon Radish Miso Soup
Various textures of mixed grains go well with soft daikon radish in this miso soup.
Ingredients (4 servings)
| Zakkoku-mai (Rice with mixed grains) |
30 g |

| Daikon radish | 4 cm |
| Gobo (Burdock) | 1/3 |
| Konegi (Thin green onion) | 2 stalks |
| Dashi stock | 800 cc |
| Miso | 3-1/2 tablespoons |
Directions
- Boil the zakkoku-mai to make it soft. Quarter-slice the daikon radish and shave the gobo into thin pieces. Cut the konegi diagonally into pieces.
- Boil the daikon and gobo in the dashi stock until tender. Add the zakkoku-mai and boil for a moment.
- Lower the heat and dissolve the miso. Serve the miso soup in bowls with the konegi sprinkled.
