Chinese Chive and Thick Deep-fried Tofu Miso Soup

Thick deep-fried tofu (atsuage) and tempura bits (agedama) absorb the flavor and umami (good taste) of Chinese chive (nira) in this miso soup.

Ingredients (4 servings)

Atsuage 1 piece
Nira 4 stalks
Agedama 4 teaspoons
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the atsuage into proper sizes and the nira to 3-cm length.
  2. Bring the dashi stock to a boil, add the atsuage and nira and boil for a moment.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls with the agedama sprinkled.

★ A Note
Atsuage, agedama and nira are all tasty but inexpensive. They are economical ingredients for miso soup.
