Chunky Burdock and Chicken Miso Soup

Ingredients (4 servings)
Burdock | 1/2 |
---|---|
Chicken | 120 g |
Mitsuba (Japanese honeywort) | 4 stalks |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Wash and scrub well the burdock and cut to 2-cm length. Cut the chicken into proper sizes. Separate the leaves from the mitsuba and cut the stalks to 3 ~ 4-cm length.
- Boil the chicken and burdock in the dashi stock until tender.
- Lower the heat and dissolve the miso. Serve the miso soup in bowls with the mitsuba on top.
