Broiled American Eggplant and Bonito Flakes Miso Soup
      American eggplant is firm-textured but becomes very tender when heated. Enjoy it with ginger in this miso soup for autumn.
Ingredients (4 servings)
| American eggplant | 1 |

| Ginger | 1 piece (15 g) | 
| Bonito flakes | 2 g | 
| Dashi stock | 800 cc | 
| Miso | 3-1/2 tablespoons | 
Directions
- Cut the American eggplant into 1-cm round slices and broil them. Grate the ginger.
 - Bring the dashi stock to a boil and dissolve the miso.
 - Place the eggplant in bowls and pour the miso soup of 2. Serve the miso soup in bowls with the grated ginger and bonito flakes gently on top.
