Western-Style Mushroom Miso Soup
With white mushrooms, brown mushrooms and mixed beans, this miso soup contains plenty of fiber.
Ingredients (4 servings)
White mushrooms | 4 |
---|---|
Brown mushrooms | 4 |
Mixed beans | 120 g |
Kinusaya (Green snow peas) | 2 pods |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Remove dirt from the white and brown mushrooms and slice them. Drain the mixed beans. Boil the kinusaya and cut diagonally into thin strips.
- Bring the dashi stock to a boil and add the white and brown mushrooms and mixed beans to cook.
- Lower the heat and dissolve the miso. Serve the miso soup in bowls with the kinusaya sprinkled.
★ A Note
Mushrooms contain a lot of umami (good taste) and add good dashi to miso soup.
