Winged Bean and Pumpkin Miso Soup
 
      This is a miso soup of crispy winged beans (shikaku-mame) and soft, creamy pumpkin.
Ingredients (4 servings)
| Shikaku-mame | 4 pods | 
|---|---|
| Pumpkin | 1/8 | 
| Dashi stock | 800 cc | 
| Miso | 3-1/2 tablespoons | 
Directions
- Cut the shikaku-mame to 1-cm width and the pumpkin, with the skin on, into proper sizes.
- Boil the ingredients in the dashi stock until tender.
- Lower the heat and dissolve the miso. Serve the miso soup in bowls.
★ A Note
Shikaku-mame has an enjoyable texture.  So, avoid boiling it too long.
