Winged Bean and Pumpkin Miso Soup

This is a miso soup of crispy winged beans (shikaku-mame) and soft, creamy pumpkin.

Ingredients (4 servings)

Shikaku-mame 4 pods
Pumpkin 1/8
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the shikaku-mame to 1-cm width and the pumpkin, with the skin on, into proper sizes.
  2. Boil the ingredients in the dashi stock until tender.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls.

★ A Note
Shikaku-mame has an enjoyable texture. So, avoid boiling it too long.
