Cold Pumpkin Miso Soup

This miso soup looks exactly like pumpkin soup. You will be surprised to eat it.
Ingredients (4 servings)
Small pumpkin | 1/4 |
---|---|
Onion | 1/2 |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
<Toppings> Dried parsley Whipping cream |
A dash A dash |
Directions
- Remove the pumpkin seeds and pulp. Peel the pumpkin and cut into a little smaller pieces. Slice the onion.
- Boil the dashi stock with the pumpkin and onion. After the ingredients become tender, dissolve the miso and mix the soup in a blender.
- Cool the soup in a refrigerator and serve it in bowls with the whipped cream and parsley on top.

Sweet pumpkin and miso bring out the best from each other.
