Minestrone Miso Soup

Ingredients (4 servings)
Zucchini | 1/2 |
---|---|
Cabbage leaves | 2 |
Yellow bell pepper | 1/2 |
Celery | 1/4 |
Miniature tomatoes | 4 |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Quarter-slice the zucchini into pieces. Cut the cabbage leaves into a little smaller pieces and yellow bell pepper into squares. Slice the celery. Also slice the miniature tomatoes and remove the seeds.
- Boil the dashi stock with the zucchini, cabbage, yellow bell pepper and celery. After the ingredients are cooked, lower the heat and dissolve the miso.
- Add the miniature tomatoes and boil for a moment. Serve the miso soup in bowls.

All the ingredients are summer vegetables in season and good for your health in summer.
