Green Bean, Edible Loofa and Sakura Shrimp Miso Soup
The savor of sakura shrimps encloses crispy green beans and tender edible loofa (nahbera) in this miso soup.
Ingredients (4 servings)
Green beans | 4 pods |

Nahbera | 1/3 ~ 1/2 |
Sakura shrimps | 2 tablespoons |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Cut the green beans diagonally to 2 ~ 3-cm length and slice the nahbera.
- Boil the nahbera and green beans in the dashi stock until tender. Lower the heat and dissolve the miso. Add the sakura shrimps and boil for a short time.
- Serve the miso soup in bowls.
★ A Note
Nahbera (edible loofa) dishes are popular in summer in Okinawa. Peel nahbera before cooking.
