Thread-sail Filefish and Green Onion Miso Soup

Instead of white Japanese leek, thread-sail filefish (kawahagi) having white fluffy meat looks better with vivid green onion (ao-negi).
Ingredients (4 servings)
Kawahagi | 1 |
---|---|
Ao-negi | 2 stalks |
Ichimi-togarashi (Cayenne pepper powder) | A pinch |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Cut the kawahagi into large chunks and the ao-negi to 2 ~ 3-cm length.
- Bring the dashi stock to a boil and add the kawahagi to cook.
- Lower the heat and dissolve the miso. Serve the miso soup in bowls with the ao-negi on top and the ichimi-togarashi sprinkled to taste.
