Enjoy a creamy and savory soft-boiled egg (onsen-tamago) and pungent watercress in this miso soup.
Ingredients (4 servings)
Onsen-tamago (available on the market) | 4 |

Watercress | 4 stalks |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Cut the watercress into halves.
- Bring the dashi stock to a boil and dissolve the miso. Add the onsen-tamago and watercress and boil for a short time.
- Serve the miso soup in bowls.

Onsen-tamago can be used for various dishes, adding richness to them, for example, on top of ordinary salad.
