New Burdock and Ground Sesame Miso Soup with Soymilk

Enjoy the flavors of various ingredients in this miso soup.

Ingredients (4 servings)

New burdock in season 1/2 ~ 1
Ground sesame 2 tablespoons
Konegi (Thin green onion) 2 stalks
Soymilk 200 cc
Dashi stock 600 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the new burdock into chunks and chop the konegi into slightly long pieces.
  2. Boil the burdock in the dashi stock. After the burdock is cooked, lower the heat, dissolve the miso and add the soymilk.
  3. Serve the miso soup in bowls with the konegi and ground sesame sprinkled.
