Green Beans, Potato and Watermelon Radish Miso Soup
With vivid watermelon radish (koshin daikon), this miso soup let you enjoy the taste of spring.
Ingredients (4 servings)
Green beans | 4 pods |

Potato | 1 |
Koshin daikon | 1 slice |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Slice the potato thinly, cut the green beans diagonally to 2 ~ 3-cm length and shred the koshin daikon.
- Boil the potato and green beans in the dashi stock until tender. Lower the heat and dissolve the miso.
- Serve the miso soup in bowls with the shredded koshin daikon on top.
★ A Note
In the season of cherry-blossom viewing, you can cut koshin daikon into the shape of cherry flower with a cookie cutter.
