Pumpkin and Ground Chicken Miso Soup

The umami (good taste) of ground chicken brings out the sweetness of pumpkin.

Ingredients (4 servings)

Pumpkin 1/4
Ground chicken 80 g
Banno-negi (Thin green onion) 1 stalk
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Slice the pumpkin and cut the banno-negi to 2 ~ 3-cm length.
  2. Bring the dashi stock to a boil and add the pumpkin and ground chicken. After the ingredients are cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the banno-negi on top.

★ A Note
Pumpkin is full of β-carotene. Prepare this miso soup in a large amount, and it is good to eat it later when the pumpkin has started to dissolve.
