Asparagus and Pumpkin Miso Soup
Sweet miso soup of crispy asparagus and soft and fluffy pumpkin.
Ingredients (4 servings)
Asparagus | 4 spears |
---|---|
Small pumpkin | 1/4 |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Remove the tough base-parts of the asparagus and slice it diagonally. Cut the pumpkin into slightly large cubes.
- Bring the dashi stock to a boil and add the pumpkin and asparagus. After the ingredients are cooked, dissolve the miso and boil only for a moment.
- Serve the miso soup in bowls.
★ A Note
Even if pumpkin is overcooked and dissolved, its taste mixed with miso is very good.
