Godofu and Wakame Miso Soup
Godofu is a kind of tofu containing kudzu (Japanese arrowroot) and starch and a local product of Saga Prefecture. Enjoy its chewy texture in this miso soup with Japanese ginger (myoga).

Godofu | 200 g |
---|---|
Myoga | 1 |
Dried wakame seaweed | 5 g |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Shred the myoga thinly and rehydrate the dried wakame in water.
- Bring the dashi stock to a boil, dissolve the miso and boil for a moment.
- Place the godofu and wakame in bowls and pour in the miso soup of 2. Serve the miso soup with myoga on top.
★ A Note
Godofu is made from soymilk with kudzu powder and starch. Enjoy its texture different from tofu.
