Spring Vegetable Miso Soup with Soymilk

Soymilk gently encloses the faint bitterness of rape blossom (nanohana).

Ingredients (4 servings)

Satsuma-age
(Deep-fried fish cake)
4 pieces
Nanohana 50 g
Soymilk 200 cc
Dashi stock 600 cc
Miso 3-1/2 tablespoons

Directions

  1. Slice the satsuma-age slightly thickly and boil the nanohana.
  2. Bring the dashi stock to a boil, add the satsuma-age and boil for a short time. After the satsuma-age is cooked, dissolve the miso and add the soymilk and nanohana.
  3. Serve the miso soup in bowls.

★ A Note
Boiling nanohana in advance reduces its bitterness.
