Noppei-jiru Miso Soup
Noppei-jiru is a local soup of Kumamoto with horse meat.
Ingredients (4 servings)
| Hitomoji (Scallion produced in Kumamoto) | 60 g |
|---|---|
| Horse meat | 100 g |
| Burdock | 1/3 |
| Ginger | 15 g |
| Sake | 1 teaspoon |
| Dashi stock | 800 cc |
| Miso | 3-1/2 tablespoons |
Directions
- Shave the burdock into slightly larger pieces. Cut the horse meat and hitomoji into proper sizes and shred the ginger thinly into “hari-shoga.”
- Place the sake and burdock in the dashi stock and bring to a boil. Add the horse meat. After the ingredients are cooked, add the hitomoji.
- After the hitomoji becomes pliant, dissolve the miso and boil for a moment.
- Serve the miso soup in bowls with the hari-shoga on top.
★ A Note
Adding sake to the dashi stock reduces the smell of horse meat.
