This is a miso soup of fluffy boiled flat fish cake (hanpen) and juicy deep-fried tofu (aburaage) with vivid and fragrant Japanese honeywort (mitsuba).
Ingredients (4 servings)
Hanpen | 1 piece |
---|---|
Mitsuba | 4 stalks |
Aburaage | 1 piece |
Dashi stock | 800 cc |
Miso | 3-1/2 tablespoons |
Directions
- Cut the hanpen and aburaage into strips.
- Bring the dashi stock to a boil and add the hanpen and aburaage. After the ingredients are cooked, dissolve the miso and boil for a moment.
- Serve the miso soup in bowls with the mitsuba on top.
★ A Note
Avoid heating hanpen too much. It would swell and then shrink, losing its fine texture.
